Cheat Pot Roast & Zucchini Pancakes

If you haven’t tried zucchini pancakes, now is the time!

My finals days in Seattle are winding down and this will likely be my last post from the Pacific Northwest. It has been a whirlwind the past few days catching up with family and friends, packing, and enjoying every bit of the city.

When your schedule gets busy as most of ours do, you need a little cheat day in the kitchen. I’ve got the perfect pot roast and zucchini pancake combo to share, and you’ll soon discover the secret behind this simple dinner trick.

Chop zucchini into one inch length pieces like hash browns.

In a large bowl, mix zucchini with flour, breadcrumbs, eggs, and garlic salt. Add water if needed to create a semi-watery texture, similar to morning pancake consistency.

Pour zucchini mix into dollar sized pancakes on a pan greased with EVOO set at medium to high heat. Fry each size for about 3-5 minutes until golden brown or at least until mixture has set. We want to make sure they are strong enough to flip!

Yay! These pancakes made the flip unscathed. Now, onto the secret behind the cheat pot roast….

The trick? Trader Joe’s, who else! Remember the Trader Joe’s Challenge? I’m not a huge fan of microwaveable food but this puppy is an exception to the rule. The meat is juicy, flavorful, and it takes all but three minutes of your time.

Cheat Pot Roast & Zucchini Pancakes
Serves 4

+ 2 large zucchinis
+ 2 eggs
+ 1/2 cup Italian seasoned breadcrumbs
+ 2 cups flour (add more if needed to create the right consistency)
+ Garlic salt
+ 1 package Trader Joe’s Traditional Pot Roast
