Salad wraps are rad.
We’re finally moved in! Boxes have been unpacked, clothes have been hung, and furniture is in its place. We just have a few more frames to hang up and should be done.
One of the best parts of moving in is having your first homemade meal. In an attempt to eat healthy, I asked Steve to select a couple of paleo recipes from this board on Pinterest.
We started last weekend early because the SF weather was too good to pass up. Indian summer is upon us, which means I still have time to experiment with refreshing new recipes like a tuna avocado salad wrap. To create a creamy mixture in lieu of mayonnaise, I mashed up avocados with some salt and olive oil.
Then, I chopped the veggies into a mixing bowl. Note to self: need more mixing bowls.
Mix it all up and let it marinate for about 30 minutes.
Serve with romaine lettuce like tacos. Crunchy, refreshing, and paleo friendly!
Lastly, don’t throw away your green onions! They are super easy to grow and will go a long way. Place them in a cup with cold water and make sure to put it somewhere with lots of sunlight. Seriously, my green onions have grown about three to four inches since I took this picture (which is less than a week ago).

Tuna Avocado Salad Wraps
Serves 4 , inspired by Nom Nom Paleo
+ 4 (5 oz) cans of wild albacore tuna in water
+ 1 bunch of green onion, thinly sliced
+ 1/2 jalapeno, diced
+ 3 medium avocados
+ 1 cup cherry tomatoes
+ 1/4 cup red onions, chopped
+ 2 limes
+ black pepper
+ romaine lettuce leaves
