Garlic Truffle Shrimp

Dinner party time!

We are finally 99.99% unpacked and our kitchen is officially open for cooking, which my friends know as a sign that they are welcome to be fed. Last week, our lovely friends Marife (also known as Marf, Mare, Merfeeee) and her husband Jordan didn’t hesitate to schedule the next free date for a little homemade. What can I say, I have friends who love to eat.

I didn’t plan very well, but had plenty of garlic and two pounds of frozen shrimp from Trader Joe’s.

So, I decided to mix them in a bowl (with EVOO, paprika, black pepper, and truffle salt). Can’t go wrong, right?

Popped it in the oven for about 25-30 minutes at 450 degrees. To add a little color, I sprinkled some green onions that grew a few more inches since this post (scroll to bottom). It’s insane how quickly green onion grows.

Twenty minutes of chit chat and drinking two-buck chuck later, we had a little surprise waiting for us. And all that broth! I didn’t expect this delicious treat.

Sautéed some broccoli and added some leftover sweet pepper salsa from the other night (sans avocado).

A fun, candlelight dinner with friends.

And when the wine got warm, I added these whisky stones that I got from last month’s Z Gallerie Pinterest party.

Ah, to cook again! (yay)

 

Garlic Truffle Shrimp

Serves 4-6

+ 2 lbs of frozen shrimp
+ 2 bulbs of garlic (not kidding)
+ 1/4 cup EVOO
+ 2 tsp truffle salt
+ 1 tsp paprika
+ 1 tsp black pepper

For sweet pepper salsa:
+ 3 sweet peppers, chopped
+ 1/4 red onion, sliced
+ 1/5 cup cilantro, chopped
+ 2 limes
